ONE POT CHEESY CHICKEN AND RICE 😍 Welcome to Day 5 of my ‘How to turn a £25 shop at Aldi into 5 meals for the week’ series 🛒 I thought I’d end this series with a one pot classic. As you know, I LOVE recipes that involve minimal effort and washing up but also taste great and aren’t complicated to make. This is exactly that 😇
As you can see you just chuck everything into one pot, wait till its cooked and then it’s ready to tuck in to. Simple! This is a dish with tons of flavour but also is super family friendly. I also had a few requests for some non tomato based one pot meals as some people can’t eat them so if it was you who asked... this ones for you 💜 I’m ALWAYS happy to take requests!

Step 1
Method:
1) Heat the oil in a pan and then add the grated carrot, allow it to cook a little then add the chicken.
2) Once the chicken is sealed add in mixed herbs, salt & pepper, stock and the rice, stir to combine and bring to the boil.
3) Reduce the heat to simmer and pop a lid on the pan. Leave for about 15 minutes to cook.
4) After 15 minutes lift the lid, add in the broccoli and pop the lid back on for a further 5-7 minutes or until the rice is cooked to your liking.
5) Remove from heat and stir in the cream and cheese so it’s well combined and melted.
6) Enjoy!

Tips
I used cream & cheese... but you could just stir in a couple of tbsps of CREAM CHEESE instead, especially if you have some leftover 😇
