Baked Feta Pasta

Instructions

Step 1
Preheat oven to 400 degrees F
Step 2
Place cherry tomatoes in a large baking dish. Add salt, pepper, and a large drizzle of olive oil. Toss until combined. (Note: If using dried herbs instead of fresh basil, add them to the mixture now.)
Step 3
Place the feta block in the middle of the baking dish. Drizzle with extra olive oil and season with salt and pepper.
Step 4
Place baking dish in the oven for 35 minutes.
Step 5
While tomatoes and feta are baking, cook the pasta.
Step 6
When pasta is done cooking, reserve 1 cup of pasta water, then drain pasta.
Step 7
Remove the tomatoes and feta from the oven. Add garlic, fresh basil, and spinach, and mix together.
Step 8
Thin sauce with pasta water as desired.
Step 9
Add pasta to sauce mixture and serve warm, Enjoy!
