Step 1
Blanch and double pod the broad beans Divide the mint leaves into two piles, large leaves in one pile small in the other. Shred the large leaves Finely chop the chilli In a bowl whisk together the salt, sugar, vinegar and oil until smooth. Stir in all the mint, the chilli and broad beans. Drain the burrata and open in a serving bowl Pour the broad bean vinaigrette over the top Serve with crusty bread.
