Pork Belly Taco with Mango Cabbage Slaw

2 lbpork belly

Tortilla
flour or corn

1 Tbsponion powder

1 Tbspgarlic powder

2 tspcayenne pepper

2 tspsmoked paprika
regular is fine

1 tspallspice ground

2 tspsalt

1 tspblack pepper

½ tspred chili pepper flakes

½ tspcumin

½ tspnutmeg

½ tspcinnamon

1 Tbsplight brown sugar

1 tspdried thyme

1 Tbspdried parsley

½ cuppineapple juice

150gwhite cabbage

1champagne mango
riped

0.5serrano chili

0.5 inchginger
grated

4 Tbspmayo

2 Tbsplight brown sugar

8 Tbspcilantro
chopped

Instructions
Step 1
Mix all the spices and the pineapple juice together.















Step 2
Rub the wet jerk seasoning all over the pork belly and marinade for 4-6hours or overnight.
Step 3
Preheat oven at 340°F. Wrap the pork belly with foil and bake for 40 minutes.
Step 4
Remove foil that covers the pork belly and adjust the oven temperature to 390°F and cook for another 15-20 minutes.
Step 5
For your slaw. Shred the cabbage, slice the mango, mince the serrano pepper and ginger and chop up some cilantro.




Step 6
In a bowl add your mayo, light brown sugar or sugar of your choice and add in your cabbage slaw (cabbage, mango, serrano pepper, ginger).







Step 7
Heat up the tortilla and assemble the meat and slaw on top. Squeeze some lime for extra flavor!
