Instructions

Step 1
Prepare and dice carrots, onions, tomatoes, potatoes (diced very small), bell peppers and sausage. Set aside.
Step 2
Dice dill pickles and place in pot of water to boil. Allow to simmer on low 30 minutes.
Step 3
Separately, combine diced onions and tomatoes and sauté and simmer in skillet until “soupy” consistency.
Step 4
Ensure potatoes are diced small. In another separate skillet, slightly fry potatoes for 5-10 minutes. Then add diced diced carrots and peppers. Allow to simmer together.
Step 5
Combine both skillets so that onions, tomatoes, potatoes, carrots and peppers are all simmering together for about 10 minutes. Then pour vegetables into pot with pickles. Allow all to slightly boil for approx. 15 minutes on low-med heat. The add diced sausage, parsley and cilantro and simmer another 15 minutes. Add additional water as needed. DO NOT add any extra pickle juice.
