Joe and the juice spicy tuna
My obsession with these Joe and the juice sandwiches is silly and I've finally nailed the perfect spicy tuna dupe with my nutrition twist of course. A dill and yoghurt tuna mix with some of the jalapeño brine for kick. I use a wholemeal pita, toasted and sliced for the closest bread copy I have tried. Load it up with tuna, pesto, tomatoes and jalapeños.
Trust me guys, I have to fight myself to not have these for lunch every day.
Leftover filling so be careful when doubling the recipe

Step 1
Drain all the liquid out of the tin of tuna. Mix the drained tuna with 1 heaped tbsp yoghurt, a few splashes of tabasco to taste, 1 tbsp chopped dill, 1 tbsp jalapeño brine, a little salt and pepper. Mix well.
Step 2
Trim the ends and sides of the pita to form a rectangle.
Step 3
Toast in an air frver at 200c for 6 minutes or in a toaster/ pan. Lay flat on a board and slice open.
Step 4
Slice the tomatoes and dry off the excess water. Spread a layer of pesto over the pita, add enough tuna to cover the pita, 3 sliced tomatoes, 4-5 jalapeños and seal together.
