Instructions
Step 1
Dice the onion and slice the garlic. Halve the tomatoes.
Step 2
Heat oil in a large pan and fry off the onion for 5 minutes. Add the garlic and as soon as it starts to colour add the tomatoes.
Step 3
Once they start to break down add just a little splash of water to keep it juicy.
Step 4
When they are nice and saucy get an emulsion blender and blend until roughly smooth. Add balsamic vinegar.
Step 5
Drain the cannellini beans and add them in.
Step 6
Simmer for a couple minutes and then serve with lashings of olive oil, basil, toasted pine nuts and cheese. Serve hot with good crusty bread!
