Instructions

Step 1
Preheat oven to 350 degree F. Spray a 9x13 pan with an oil spray. In a bowl mix together the applesauce, monk fruit, and vanilla extract. Add Lupin flour, cocoa powder, baking soda, and salt. Mix well. Add finely grated zucchini (do not squeeze or drain). Let sit for 3-5 minutes. Batter will moisten. Add in chopped almonds and pepita seeds. Let sit another 3-5 minutes. Pour into baking pan and bake for 25-35 minutes. Test with a toothpick for doneness.
