Chicken Pan Sauce/Gravy

Instructions

Step 1
Add Oil to sauce pan.
Step 2
Add chicken back bone and brown it.
Step 3
Add Onion, Carrot, and Celery. Sweat until slightly soft but not fully brown.
Step 4
Add 1 oz. Butter.
Step 5
Add Flour.
Step 6
Add Vermouth and Wine. Cook until wine is boiled out.
Step 7
Add Soy Sauce.
Step 8
Reduce mixture down until thick.
Step 9
Strain mixture to remove all but the sauce.
Step 10
Add 1 Tbsp. Butter for flavor.
Step 11
Thin Sauce with Chicken stock until desired consistency.
Step 12
Place in gravy boat and serve hot.
