Step 1
Let's dive right in! Heat oil in your pan and play a little pop-corn game with the mustard seeds. Once they start having a pop party, invite your onions and salt. Give them a few minutes until they soften and welcome the aroma.

Next, we usher in garlic, ginger, cumin, coriander, star anise, clove, and chilli. Mix them well, and let the spices mingle.

Then, bring in the water and chicken to the party. Once it reaches boiling point, put a lid on, reduce the heat, and let it simmer for 1 hour. Patience, my friends, is key to a great curry!
