Instructions
Step 1
pre-cook shrimp, drain. Chop cucumber, spinach, and place raw in large bowl. Remove shrimp tails. Cook pasta/ barley with garlic. Drain-if needed-and add (while hot) to raw veggies. Mix in shrimp, some olive oil, lemon juice, salt/ pepper to taste. (This way the veggies keep nutrients & don't get mushy)
