Italian Chicken

Instructions

Step 1
1. Add chicken to a bowl. Add extra virgin olive oil, Italian dried herbs, paprika, garlic powder and salt and pepper. Toss to coat.
Step 2
2. Cook chicken in the airfryer on 180c for about 12 minutes or on the grill/pan.
Step 3
3. Bring a pot of salted water to the boil. Add dried orzo/risoni pasta and cook according to the packet directions.
Step 4
4. Once cooked, drain the orzo well and return it to the pot. Add 2 tablespoons of basil pesto and stir to combine.
Step 5
5. Chop tomatoes, finely slice red onion and basil. Add to a bowl.
Step 6
6. Dress with extra virgin olive oil, balsamic glaze and salt and pepper.
Step 7
7. Assemble meals with a base of spinach/rocket. Add pesto orzo, tomatoes and chicken.
Step 8
8. Finish with a sprinkle of pecorino or Parmesan and drizzle of balsamic glaze.
Step 9
9. Keep refrigerated for up to 3 days.
