This quick and easy option for breakfast is delicious, nutritious, and filling. The best thing about this recipe is you can scale it up to feed more people or you can make it just for yourself. It's also very versatile. You can make it vegan, you can add meats, different veggies, etc. Whatever your heart desires. I prechop and cook bell peppers at the beginning of every week. That way I can just grab them and throw them into any dish I like.

Instructions

Step 1
If you haven't pre-cooked your bell peppers, you need to chop them up and cook them in a pan with a little bit of oil until they're cooked to your liking. I cook mine until they start getting little char spots

Add the cooked bell peppers into a pan on low to medium heat.(if you didn't pre-cook them just leave them in the pan you used to cook them)
Step 3
Add the Hashbrown potatoes to the pan with the peppers and cook until warm. (If you want to use jarred jalapeños this is the time to add them)

Step 4
While your potatoes cook, in a separate bowl combine cheese, eggs, and seasoning. Wish until well combined.

Once potatoes have been cooked pour in the egg mixture and push around the pan to scramble it all together. (You can do an omelet if you want too)

If desired you can add cheese on top before serving.
