Bringing back the viral green goddess trend with this creamy dreamy butter beans recipe🧚‍♀️

INGREDIENTS:
- 3 garlic cloves
- 1 onion, sliced
- 2 zucchinis, sliced
- Drizzle of olive oil
- 2-3 cups spinach
- 1 cup basil
- 1 cup coconut cream
- 2 cups canned/cooked butter beans
- Salt & pepper to taste
INSTRUCTIONS:
1. Drizzle olive oil into a large skillet over medium high heat. Add garlic and onion. Fry for 2 minutes before adding zucchini and spinach. Fry for a couple of minutes until all the vegetables are cooked.
2. Transfer them into a blender along with basil and coconut cream. Blend until smooth.
3. Pour back into the pan over medium low heat with the beans. Season with salt and pepper to taste.
4. Garnish with a drizzle of olive oil, lemon juice, fresh basil, unsweetened vegan yogurt and black pepper. Serve with bread or on rice. ENJOY!
