Preheat the oven to 210C/gas 7.
Step 3
To make the dressing, put the chilli, honey, vinegar, molasses, lemon and garlic in a jar with a good pinch of salt and two teaspoons of extra virgin olive oil. Give it a good shake.
Step 4
Set a cast iron frying pan over a medium heat with a splash of oil. When the pan is hot, place the nectarines cut side down. Cook for 2-3 minutes, or until the cut side has browned a little. Use tongs to turn each half over. Turn the heat off and pop the pan in the oven to continue cooking. Roast for ten minutes.

Meanwhile, fry the halloumi. Set a large frying pan over a medium heat with another splash of oil. Fry the cubes of halloumi until well browned on each side. Remove from the pan and set aside.
Step 6
When the nectarines are cooked and out of the oven, pour the dressing over them. They don’t need to be piping hot when you do this, you just want them to be warm enough to warm the dressing through.
Step 7
Cut each nectarine in half again (i.e. quarters), then arrange them all on a plate. Tuck the crispy halloumi and slices of red onion between the fruit. Spoon over the dressing that will be left in the nectarine pan over everything. Finish with basil leaves and a pinch or two of sumac.
