Crista's Ultimate GF Banana Pancake

I have honed this recipe over the years to make my ideal, easy weekend fluffy and protein packed GF pancake. You won't even notice the added spinach and it adds a punch of veggies to this otherwise sweet breakfast treat.

Ingredients
2 servings
¼ cupoat flour
¼ cupvegan protein powder vanilla flavor
¼ tspbaking soda
¼ tspcinnamon
1egg
1banana
extra ripe
½ cupfrozen spinach
Optional Mix In's and Toppings
Instructions
Step 1
In a small bowl, stir together all dry ingredients until well incorporated. Set aside.
Step 2
In a medium bowl or mixer, mash banana and mix all wet ingredients together thoroughly.
Step 3
Slowly mix in dry ingredients to wet ingredients until just incorperated.
Step 4
Add any optional mix ins such as berries, nuts, or chocolate chips.
Step 5
Grease a small skillet with cooking oil or butter and pour in half of batter. Cook over medium-low heat until browned on each side. Then cook the second half of the batter.
Step 6
Top with maple syrup, Greek yogurt, and/or nut butter of your choice, and enjoy!
