Greek couscous salad

Instructions

Step 1
Drain, rinse, and pat dry the chickpeas. Toss in olive oil and spices (Zatar, onion, garlic, shawarma seasoning, salt & pepper) then roast @ 350 for 25-30 mins.
Step 2
Cook couscous according to package.
Step 3
Prep the veggies: half the cherry tomatoes, slice cucumbers, thinly slice red onion, roughly chop dill, half the olives, chop the Pepperocini.
Step 4
Crumble the feta into a bowl, then add dressing ingredients and whisk until creamy.
Step 5
Assemble and toss salad ingredients together. Top with chicken or other protein source if desired!
Step 6
Too with more crumbled feta, pine nuts, and additional fresh herbs as desired (dill, parsley, etc.)
