Galbi Jjim - Korean Braised Short Ribs
This recipe is longer than my usual 30 minute meals but it is worth the additional cooking time!

Ingredients

4 lbsbeef ribs
2-3 inch cut pieces
1 cupdry shitake mushrooms
2 cupswater

Soak the ribs in cold water. Change water every 30 minutes and then trim off the excess fat off the ribs. Do this 2-3 times. Blanche and rinse ribs.
Step 3
Soak shitake mushrooms in 2 cups hot water for 1 hour. (Cut into quarters if using large mushrooms) Cut the radish, carrots and onions into 2 inch pieces and the green onions into 2 inch long pieces. Peel and core the pear/apple.
Step 4
In a small blender, add mushroom water, 1/2 white onion, garlic, ginger, Asian pear/apple and blend until smooth. Then add soy sauce, mirin, sugar, sesame oil and black pepper. Mix together. To a large pot, add the beef ribs then pour the sauce over it. Cover and cook on high heat for 20 minutes then cover and simmer for another 45 minutes.
Step 5
Add the radish, carrot, and mushrooms. Cover and cook for another 45 minutes. Baste every 15 minutes. After 45 min, increase the heat to high, add green onions, uncover and cook for another 10 minutes to let the sauce reduce. The longer you cook it, the less sauce you will be left with.
Step 6
Serve with steamed rice and kimchi!
