These quick and easy fritters make a great addition to nearly any meal. Breakfast, brunch, lunch, or dinner. Serve them with sour cream, your favorite salsa, or even a scoop of homemade jam. They are a chart-topper on our table!

2/3 C flour
Step 2
Shred zucchini, salt lightly and put in colander to drain for 15 minutes. Squeeze as much liquid from the zucchini as you can and place in a bowl. A small handful at a time works well.
Step 3
In a separate bowl mix dry ingredients and then add zucchini and beaten eggs. Stir until well mixed.
Step 4
While the zucchini is draining, warm a griddle or large skillet on medium/medium low heat. When you are ready to fry the fritters, brush the pan with oil.
Step 5
Place 2-3 Tbs blobs of zuke mix in pan and flatten to 9mm (3/8”) give or take. Round or unique shapes are good . Fry until browned and flip like pancakes.
Step 6
Place on paper towels to drain. Serve with sour cream, salsa, or your favorite jam.
