Ingredients
4 servings
4chicken thighs
½ tspsalt
½ tsppepper
½ tspgarlic powder
0.5juice of lemon
1red onion
sliced
2garlic cloves
minced
1 Tbspitalian seasoning
1 tspred chili flakes
2 cupslong grain rice
pre-soak 10 mins
4 cupschicken stock
lemon slices
parsley
for garnish
Garlic Yogurt Dip
Instructions
Step 1
Marinate chicken thighs with salt, pepper, garlic powder & lemon juice.
Step 2
Add 2 tbsp olive oil to large skillet and sear chicken thighs until golden and crisp.
Step 3
Remove from pan and let rest on a plate. In the same pan, add sliced onion and cook down. Then add lemon juice to lift the brown bits from the pan. (Can add water if needed)
Step 4
Add garlic, italian seasoning, pepper, red chili flakes, and cook for a few minutes.
Step 5
Add rice, chicken stock and salt. Then place chicken back in the pan with lemon slices on top.
Step 6
Let come to a boil then cook covered for 10 minutes on low-medium heat.
Step 7
Then wrap the lid with a kitchen towel and cook on lowest heat for 10 minutes.
Step 8
Garnish with parsley and serve with garlic yogurt dip.
