SESAME COLD NOODLES
A traditional style Taiwanese sesame noodle dressing to toss withh fresh noodles (I like using fresh wide rice noodles)! Creamy, flavourful and delicious.

Ingredients
2 servings
SAUCE
5 Tbspchinese sesame paste
or substitute for tahini, you may have to use less
1 Tbspsmooth peanut butter
2 Tbspsoy sauce
2 Tbspsesame oil
2 Tbspsugar
½ tspsalt
¼ tspmsg
2 Tbspwater
2cloves garlic
minced
2 tspginger
grated
2 Tbsprice vinegar

Instructions
Step 1
Mix all sauce ingredients in a bowl until well combined.
Step 2
Peel and julienne cucumber or cut into matchsticks, finely chop spring onion, roughly chop some coriander.
NOODLE NOTES
Step 3
The amount of sauce is about perfect for 400g uncooked fresh wheat noodles - cook as per packet instruction, rinse with cold water and drizzle with sesame oil OR 450g fresh cooked rice noodles - I steamed mine to heat then tossed with sesame oil. But don't stress you can use any noodles! and just cook, cool and pour on as much sauce as you desire!
ASSEMBLE
Step 4
Pour as much or as little sauce over your noodles and mix well to combine
Step 5
Top with cucumber, spring onion, toasted sesame seeds and chilli oil and DEVOUR!
