Step 1
Activate the Yeast: In a small bowl, dissolve the fresh yeast in a small amount of lukewarm water. Let it sit for a few minutes until it becomes frothy.

Combine Dry Ingredients: In a large mixing bowl, combine the wheat bran, rolled oats, coarse ground whole wheat flour, fine whole wheat flour, and all-purpose flour. Mix them together to evenly distribute the grains.

Mix the Dough: Make a well in the center of the dry ingredients and pour in the yeast mixture. Add the remaining water and sprinkle the salt over the water. Mix everything together until a sticky dough forms.

Knead the Dough: Turn the dough out onto a floured surface and knead it for about 10-15 minutes, or until it becomes smooth and elastic. You can gradually add more flour if needed, but keep in mind that the dough will be slightly sticky due to the whole grains.

First Rise: Place the kneaded dough in a lightly greased bowl, cover it with a clean towel or plastic wrap, and let it rise in a warm place for about 1-1.5 hours, or until it has doubled in size.

Shape the Rolls: Punch down the risen dough and turn it out onto a floured surface. Divide the dough into equal portions to shape the desired size of rolls. You can shape them round or elongated, depending on your preference.

Second Rise: Place the shaped rolls on a baking sheet lined with parchment paper, leaving some space between each roll. Cover the rolls with a towel and let them rise for another 30-45 minutes.

Preheat the Oven: Meanwhile, preheat your oven to 200°C (390°F).

Bake: Once the rolls have risen again, place them in the preheated oven and bake for about 15-20 minutes, or until they are golden brown on the outside and sound hollow when tapped on the bottom.
