Lentil Soup
We added an extra carrot, mushrooms, and didn't blend it.

Instructions
Step 1
1. In a large saucepan over medium-high heat, heat the oil until it shimmers.
Step 2
2. Add the turkey bacon. Cook for about 5 minutes, stirring occasionally until browned. With a slotted spoon, remove the bacon from the oil and set it aside.
Step 3
3. To the pan, add the lentils, carrot, mushrooms, thyme, rosemary, salt, cumin, and broth. Bring to a simmer. Cook for 10 minutes, stirring occasionally until the carrots are soft.
Step 4
4. Eat as is, or transfer the hot soup to a blender and process until smooth (see the tip). Serve garnished with the reserved bacon.
