¼ cupturkey breast
diced, cooked, skinless
½ cupfresh baby spinach
¼ cupdiced tomatoes
¼ cupred onion

or a little olive oil, for the pan
¼ cupdiced tomatoes
2 tablespoonsred onion

1 tablespoonfresh cilantro
chopped
½ tablespoonlime juice

Instructions

Make the Salsa:

In a small bowl, combine the diced tomatoes, diced red onion, chopped cilantro, lime juice, salt, and pepper. Set aside to let the flavors meld.

Prepare the Omelette Ingredients:

In a non-stick skillet, sauté the diced turkey breast until heated through. Remove from the pan and set aside.

In the same skillet, quickly sauté the baby spinach until wilted. Remove from the pan and set aside.

Using the same skillet, sauté the diced tomatoes and diced red onion until slightly softened. Remove from the pan and set aside.

Cook the Egg White Omelette:

In a bowl, whisk the egg whites until frothy. Season with salt and pepper.

Heat the skillet over medium heat and coat it with cooking spray or a small amount of olive oil.

Pour the whisked egg whites into the skillet. Allow them to set for a moment.

Once the edges are set, add the sautéed turkey, spinach, tomatoes, and red onion onto one half of the omelette.

Carefully fold the other half of the omelette over the filling, creating a half-moon shape.

Cook for another minute or until the omelette is fully cooked and slightly golden.
