This is a healthy recipe for tasty low kcal protein muffins. It's also vegan and refined sugar free.

Ingredients
7 servings
¼ cupvanilla protein powder
¼ cupoat flour
¼ cupflour
1 ½ teaspoonbaking powder
you can also use baking soda
salt
you won't be needing this if you used baking soda
6 tablespoonsunsweetened apple sauce
3 tablespoonsnon-fat Greek yogurt
1 ½ tablespoonsmaple syrup
or other natural sweetener of choice
1 teaspoonvanilla paste
⅛ cupunsweetened almond milk
Instructions
Step 1
In a bowl whisk together vanilla protein powder and both of the flours (if you don't have the protein powder you can just use flour) with baking powder and salt.
Step 2
In another bowl, combine apple sauce, greek yogurt ( and here I usually use Bieluch, it's a polish cream cheese and I always get the light one), a natural sweetener of choice ( but I wouldn't recommend using honey here, because when you heat it up it looses all of it's health benefits and it's even worse than using normal sugar), vanilla and almond milk.
Step 3
Add the wet ingredients to the dry until just combined, don't overmix
Step 4
Spoon the batter into the muffin cup filling it about 3/4 full and top them however you like ( I usually use berries chocolate or cream cheese for filling)
Step 5
Bake at 350°F/175°C for 10-15 minutes, until the toothpick inserted into the center of a muffin comes out clean
Step 6
Cool the muffins for a couple of minutes before transfering them onto a cooling rack
