Ingredients
4 servings
½ cupvegetable Protein
Textured

1 teaspoonsesame oil

2 teaspoonssoy sauce

2 teaspoonsfresh ginger
minced

2 teaspoonsfresh garlic
minced

½ cupmushrooms
preferably shiitake, minced

1 cupshredded cabbage

2 Tablespoonspeanut powder

1 teaspoonchili oil
schezwan chili crisp - specifically

½ teaspoonrice wine vinegar

1 teaspoontahini

1 teaspoonmiso

0.5 packageinstant ramen noodles

3 cupsbok choy
julienned

2 teaspoonscorn starch
Instructions
Step 1
In a large microwaveable bowl add TVP, sesame oil, garlic, ginger and mushrooms. Add enough water to soak and microwave for two minutes.

Step 2
Remove TVP and mince, returning to bowl. Stir again, add cabbage and microwave for another minute


Step 3
In small bowl, combine peanut powder, schezwuan crisp, rice wine vinegar, and miso. Add just enough water to combine.






Step 4
Bring stovetop to high bring two cups of water to boil in a small pot, adding ramen and flavor packet if you wish. After one minute add bok choy to ramen




Step 5
In small bowl ( I use the one I already used for the peanut powder mix) blend 2 teaspoons of cornstarch into 2 Tablespoons of cold water


Step 6
While stirring noodles and book hoy, quickly combine cornstarch slurry to boiling pot, continue cooking for one minute, stirring all the while
Step 7
Pour noodles from pot into large bowl of “mince” and sauce. Thoroughly combine, enjoy! Optionally, top with chopped peanuts and sliced green scallions- extra chili crisp for chili heads like me!
