Step 1
Seasoning the pork chops with the ingredients listed below

Add a large pan over medium heat. Once hot add the oil. allow the oil to get hot.

Coat the pork chops in the flour before adding it to the pan and searing on both side until golden brown.( we're not looking to fully it cook it through, not yet) it is important that your heat is not to high so you don't burn the flour that will fall of the pork chops while searing it.

Remove and set the pork aside after searing. LOWER HEAT to low. Gradually add in the flour as you stir, to make your roux.

stir in all the flour and once the roux gets to nice brown color, add the onion. Once the onions have soften add in the garlic and butter. Stir until fragrant and the butter has fully melted.

Gradually add the water or chicken stock as you stir. the roux will thicken up just continue to stir and gradually add all the water. after all the water if it seems to thick add a little more to loosen it up.

Seasoning with the listed spices. taste for quality. Then add the pork chops back in the pan, and spoon the gravy over it. cover and allow to simmer on low heat for 8-10 minutes.
