Instructions
Step 1
Prepare the chicken by slicing each breast in to thirds horizontally in equal portions. There is no need to flatten them out. Set aside.
Step 2
In a shallow bowl mix together breadcrumbs, any all-purpose seasoning of choice, black pepper, salt, paprika and grated parmesan. Set aside.
Step 3
In another shallow bowl, whisk together eggs, milk, all purpose seasoning, black pepper, salt, paprika and grated parmesan.
Step 4
Dredge each slice of chicken in the egg mix, then into the breading mix, making sure to pack on the breading well. Shake off any excess and set each breaded chicken on a plate.
Step 5
You can freeze each slice of breaded chicken at this point for future meals, or you can continue on to shallow fry them.
Step 6
In a large skillet or cast iron pan, heat up light olive oil on medium high heat with a piece of garlic clove (optional) as it flavours the oil. Once the garlic is golden remove it, and shallow fry each chicken cutlet for 1-2 minutes on each side. They are thin so they cook quick.
Step 7
Let the chicken rest on a wire rack or paper towels and serve hot.
