Ingredients

0.75 lbchicken breasts
cut into bite size pieces
1 cupzucchini
diced
½ cupred bell pepper
diced
½ cupyellow bell pepper
diced
½ cuponion
diced
1 ½ tspminced garlic
½ cupcorn
frozen or fresh
2 Tbspoil
½ cupcanned diced tomatoes
not drained
2 tsptaco seasoning
1 tspcumin
½ cupmexican blend shredded cheese
½ cupcilantro
chopped
Instructions
Step 1
1) toss chicken with taco seasoning and cumin. over medium heat, add 1 tbsp oil to large skillet and cook chicken about 5 min, stirring occasionally. remove from pan and set aside.
Step 2
2) add 1 more tbsp oil to pan and sauté onion, garlic, and bell peppers for 5 min, stirring occasionally. add zucchini, black beans, corn, and tomatoes. cover and cook on low for 10 min
Step 3
3) return chicken to skillet. sprinkle cheese on top and cover for a few minutes until cheese is melted. top with cilantro.
