Soy Sauce Marinade, Master Recipe
Use this marinade for flavoring the soy sauce eggs and chashu in the recipes that follow. To make it, we combine Japanese seasonings brimming with umami together with fresh aromatics, bring them to a boil, then let the flavors mingle. Simple but potent, this marinade will infuse eggs and pork with complex, alluring flavors. Store it in the refrigerator for up to one month. -- Makes about 2 3/4 cups
