Instructions

Step 1
Heat some oil in a large saucepan on medium heat along with the onions, celery, carrots, garlic and spices. Cook for 3 minutes and then add the quorn and continue to cook for another 4 minutes, breaking up any larger chunks of mince.
Step 2
Add the tomatoes, tomato purée, chickpeas and kidney beans to the pan and incorporate well. Add the balsamic vinegar as well as a splash of water then season to taste.
Step 3
Bring to the boil before reducing the heat and simmering for an hour, stirring occasionally.
