Ingredients

1 teaspoonolive oil
2 tablespoonlow-sodium soy sauce
1 tablespoonlime juice
fresh
2 teaspoonchili-garlic sauce
or Sriracha
2carrot
medium, shredded or julienned
2green onions
medium, light green and white parts, sliced
1 poundextra lean ground beef
95% lean
1red bell pepper
medium
2 tablespoonmint
chopped, fresh
8 leavesiceberg lettuce
large, or butter lettuce leaves
1 tablespoonlight brown sugar
¼ cupcilantro

Instructions
Step 1
1. Heat oil in a large nonstick skillet over medium-high heat. Add beef; cook, stirring often, for 5 minutes or until crumbled and browned. Add bell pepper and carrot;

cook 1 minute.
Step 3
2. Combine soy sauce, lime juice and brown sugar in a small bowl, stirring until sugar dissolves. Stir into beef; cook 1 minute until heated. Remove from heat, and transfer to an airtight container. Refrigerate meat mixture until chilled and ready to serve.

3. Stir in green onions, cilantro and mint. Spoon heaping
Step 5
1/2 cup beef mixture into center of each lettuce leaf.
Step 6
4. Note: If desired, lettuce can be chopped, served in a bowl and ground beef mixture spooned on top.
