Instructions

Step 1
After removing the scales and skin of the salmon (if you prefer to) pat dry with a paper towel. Drizzle with olive oil and season generously.

Step 2
Heat a large frying pan over medium/high heat. Melt down 1 tablespoon of unsalted butter. Add the salmon (skin-side down), cook until the skin is crisp and salmon is to your liking. Flip over and continue to cook on the other side. When the salmon is ready, remove it from the pan, squeeze juice from half of a lemon onto the salmon and set aside.
Step 3
In a separate pan, add a drizzle of olive oil, spinach and your sun-dried tomatoes. Allow spinach to cook down and sun dried tomatoes to become fragrant before setting aside to add to the sauce.

Step 4
In the same pan you cooked the salmon, melt 3 tablespoons of butter then add garlic paste and herbs. Sauté for a few minutes until aromatic, pour in the heavy whipping cream, add in the Italian cheese blend and grated parmesan cheese. Allow to simmer until thick, adding more cheese as desired. Once sauce thickens, add in your cooked spinach and sun-dried tomatoes, season to taste.
