This healthy dish combines vegetables with ground beef and cheddar cheese in a skillet dinner that can be served as a side dish or over white or brown rice as a complete meal. This is a version of what some may call Calabacitas (squash, corn, and onions).

Instructions
Step 1
Slice the zucchini and yellow squash into 1/4 inch slices, cutting some of the larger pieces in half, and place in a large bowl.
Step 2
Chop up the onion into 1 to 2 inch pieces, separating the layers after chopping, and add to the bowl with the squash.
Step 3
If using ears of corn, cut the kernels off the cob and place in a separate bowl from the squash and onions.
Step 4
Brown the ground beef in a large skillet, and remove from the skillet when browned. Drain any leftover beef fat but do not wipe out the skillet.
Step 5
Add the squash, onions, and butter to the skillet and cook over medium heat for about 8 minutes.
Step 6
Return the ground beef to the skillet and add the corn, garlic salt, pepper, and Maggi sauce. Stir well, reduce heat to low, cover the skillet and cook for an additional 8 minutes.
Step 7
Stir in the cheese and remove from heat. Enjoy!
