Shrimp and egg, crispy fried rice

This is a quick and easy recipe for making an Asian inspired fried rice. Frying the jasmine rice in a mix of avocado and sesame oil gives it the characteristic flavor and texture.

Instructions
Step 1
Cook jasmine rice following your favored method.
Step 2
In a non stick pan heat 2 tbsp avocado oil and 1 tsp sesame oil.
Step 3
Add chopped ginger, chopped scallions, peas, carrots, peanuts and sliced celery. Session with salt and pepper. Fry for 5 minutes. Remove from the pan and set aside.
Step 4
In the same pan heat 2 tbsp avocado oil and 1 tsp sesame oil. Crack in 4 eggs, session with salt and pepper and scramble. Remove from the pan and add to the vegetables.
Step 5
In the same pan heat 1 tbsp avocado oil and 1 tsp sesame oil. Fry seasoned shrimp until done, approximately 3-4 minutes. Remove from the pan and add to the eggs and vegetables.
Step 6
In the same pan heat 2 tbs avocado oil and 1 tsp sesame oil. Once heated, add the cooked rice in an even layer and cook on medium heat for 3 minutes. At the end of 3 minutes, turn the rice over and cook for another 3 minutes till the rice is crispy and fried. Session with salt and pepper.
Step 7
Add the vegetables, eggs and shrimp to the cooked rice in the pan. Add vinegar and soy sauce to taste. Add more salt if required. Serve hot.
