500gspinach fettuccine

250ml15% cooking cream
or coconut milk

200gmascarpone

200mlvegetable broth

grated parmesan

2red onions

4cloves garlic

30cherry tomatoes

3 Tbsptomato paste

1 handfulfresh basil

1 tspdried basil

1 tspdried parsley

1 tspdried oregano

½ tspdried rosemary

½ tspdried thyme

1 tsppaprika powder

¼ tspred chili flakes

¼ tspgarlic powder

1 tspsalt

¼ tspblack pepper
Instructions
Step 1

Prep spices









Step 2

Chop the onion and basil leaves, mince the garlic and prep tomatoes and vegetable broth






Step 3

To a pot, add fettuccine, salt and olive oil, reserve the pasta water for later



Step 4

To a pan, add the onion, garlic, spices, tomato paste and olive oil












Step 5

Add the cherry tomatoes and vegetable broth - cook under a lid until the tomatoes burst


Step 6

Add the cream and mascarpone


Step 7

Add cooked pasta and fresh basil - add the pasta water as needed for desired consistency


Step 8

Garnish with fresh basil and parmesan
