Instructions
Step 1
Cook 1 cup of rice + 1 1/2 cup of water - set aside
Step 2
Heat butter in soup pot over medium heat until melted
Step 3
Add garlic, onion, celery & carrots stirring occasionally 5-10 minutes or until cooked
Step 4
Add sweet potato cook for 5 minutes
Step 5
Add vegetable broth
Step 6
Bring to a boil then simmer on low heat covered for 10-12 minutes
Step 7
Add kale + mushrooms cook 5 minutes or until potatoes are cooked thoroughly
Step 8
Add cooked rice and coconut milk stirring together
Step 9
Take off heat and add salt & pepper to taste
