Instructions
Step 1
In food processor or blender, grind oats to flour.
Step 2
In a small bowl, mash the banana. Add egg, oats, and cinnamon. Allow to stand for 2-5 minutes.
Step 3
Heat oil in a small non-stick frying pan over low to medium heat. Pour half egg mixture into pan to make 1 small pancake. Flip pancakes after 2 minutes, or when you start to see bubbles appear and cook on the other side until golden.
Step 4
Remove from pan and place on a serving plate. Repeat with remaining mixture to make second pancake.
Step 5
Whilst pancakes are cooking, quickly defrost berries in microwave for 20 to 30 seconds.
Step 6
To serve, spoon berries on top. Serve with yogurt or save for a mid-morning snack.
