Instructions
Step 1
1. In a small bowl mix together sour cream and hot sauce.

2. Melt butter in a skillet over medium heat. Add eggs and swirl pan to form a thin, even layer. Place tortilla over eggs and cook until eggs are set, 2 to 3 minutes.

3. Flip tortilla and cook for another minute. Remove from heat and onto a clean surface, egg side-up.

4. To assemble: Slice tortilla from one end to the center and place onto a clean surface so the cut is on the bottom center.
Step 5
5. Sprinkle cheese on the bottom left quarter of the tortilla and top with bacon.
Step 6
6. Place hash brown patty onto the top left side of the tortilla, the spicy sauce on the top right side, and finally the avocado on the bottom right side of the tortilla. Season with salt and pepper.
Step 7
7. Beginning with the bacon side, fold the tortilla up, then to the right, and down again so you end up with a triangle shaped tortilla breakfast quesadilla/sandwich.
Step 8
8. Optional: Heat a large skillet to medium heat. Place folded tortilla onto skillet and toast for 2 minutes. Flip and continue to toast for an additional 2 minutes. Serve.
