500glean beef mince
½ cupred capsicum
finely diced
2 tsppaprika
1 tspcumin
1 tsponion powder
1 tsporegano
1 tspsalt
½ tspblack pepper
2 Tbsptomato paste
¼ cupwater
Avocado Dip
1avocado
⅓ cupplain yoghurt
or sour cream
⅓ cupcoriander
roughly chopped, half a
½ tspgarlic
freshly minced
1 Tbsplime juice
½ tspsalt
½ tspblack pepper
1 Tbspwater
to loosen as required
Instructions
Step 1
Heat the olive oil in a large, heavy based skillet on medium-high heat. Add the onion and garlic, cook, stirring for 2 minutes. Add the beef mince. Cook the beef for 3-4 minutes until browned.
Step 2
2. Add the capsicum and cook for a further 2 minutes.
Step 3
3. Add the remaining ingredients and simmer for 2 minutes or until most of the water has evaporated.
Step 4
4.Allow it to cool slightly before assembling the tortillas.
Step 5
5. To make the avocado dip, combine all the ingredients in a food processor and blend until smooth.
