These Roasted Sweet Potato Tacos are a perfect combination of flavors! The sweet potatoes are perfectly roasted and paired with peppers and onions for some traditional taco flavors, corn for a small pop of sweetness, toasted pumpkin seeds for a bit of a crunch, and a delicious chipotle sauce for a kick of spice. If you aren't a fan of spice, feel free to replace the chipotle sauce with plain coconut yogurt, vegan sour cream, or guacamole!

medium, cubed, aim for 1/2 inch cubes

1 Tbsppure maple syrup

½ tspcumin

1 tspsmoked paprika

½ tspgarlic powder

0.5red bell pepper
medium, cut into strips, aim for 1/2 inch wide

1yellow onion
small, cut into strips, aim for 1/2 inch wide, and be sure to remove any super thin outer layers of the onion before slicing as these layers will roast too quickly

½ Tbsplime juice

¾ cupfrozen corn
thawed, I like to thaw mine by simply placing it in a colander and running cold water over it in the sink - only takes a couple minutes!)

¼ cupraw pumpkin seeds

1chipotle pepper

½ cupplain coconut yogurt

3 tsppure maple syrup

½ tspcumin

1 Tbsplime juice

3cloves garlic

4tortillas

1avocado
sliced

1 tspadobo sauce
from a can of chipotle peppers in adobo sauce
