Hertzoggies
Are you familiar with Hertzoggies? 🤍 I’m not a jam fan typically but these I love 😍. Especially when my aunt makes them!! This was my first attempt and they weren’t the neatest but definitely were delicious!! Give them a try ❤️
Hertzoggies
Pastry
500 ml cake flour
45 ml castor sugar
10 ml baking powder
1 ml salt
125 g butter/margerine
3 egg yolks
15 ml water
Sift first 4 ingredients.
Rub in soft butter.
Beat yolks and water and add to the flour mixture.
If the dough is too stiff, add in more water.
Knead well.
Roll out thin on a floured board.
Cut with round cutter and place in a well greased muffin pan.
Place a little apricot jam onto the pastry.
Filling
3 egg whites
250 ml castor sugar
500 ml dessicated coconut
Beat egg whites until stiff.
Gradually beat in sugar.
Fold in coconut.
Place spoonfuls on top of jam.
Bake at 180 degrees Celsius for about 20 minutes or until golden.
Allow to cool in pan for a little while before moving onto a rack.
Note: Don’t add too much jam
