Step 1
Preheat oven to 375 degrees F
Step 2
Peel and slice beets thin, 3mm on mandolin. Toss in 1-2 tbs of olive oil and spread on baking pan. Sprinkle with salt and roast for 30 minutes, tossing half way.
Step 3
While beets roast, use immersion blender to puree yogurt with 1tbs olive oil, lemon juice, dash of salt, and mint leaves until smooth. Taste, adjust, and spread thick on serving dish.
Step 4
When beets are done, let cool for at least 10 minutes before arranging them on the yogurt. Top with generous flaky salt, edible flowers, and mint florets.
