Deconstructed Kousa Mahshi - basically an unstuffed zucchini with beef and rice! Who else grew up on the nostalgic dish? This is so much easier and includes all of the classic flavours of the stuffed the version.

Instructions

Step 1
In a large dutch oven or pot on medium high heat, brown the ground beef, breaking it apart, until you see no more pink. Add the diced onion, Arabic 7 spice, turmeric, cumin, cinnamon, black pepper and salt and mix everything through.
Step 2
Move the ground beef to the side of the pot, and add the sliced zucchini’s. Mix them around with the ground beef for around 5-10 minutes just to slightly cook them.
Step 3
Make the tomato broth by mixing water, tomato paste, olive oil, black pepper, and salt and whisk it through until the tomato paste is melted. Pour the broth over the beef and zucchini, optional to add more or less water depending on how much broth you like.
Step 4
Bring the pot to a boil on high heat. Once at a boil, turn it down to low, and place the lid on. Let it simmer for 20-30 minutes.
Step 5
To make the sticky white rice: In a pot on medium high heat, mix the rice and ghee until rice is coated. Pour water over the rice. Bring to a boil on high heat. Once at a boil add salt and mix it through. Cover with a lid and turn the heat down to low. Let it simmer for 25 minutes. Take it off the heat and let the rice set for 10 minutes before opening the lid.
Step 6
Serve the rice on a plate with a few scoops of the zucchini and beef broth.
