Ingredients

2 ⅓ cupsdried red lentils

7 cupssweet potato
peeled

4 ⅔ cupslow salt vegetable stock

1 cupwater

1shallot
small, finely chopped

3 ½ tablespoonsThai red curry paste

1 tablespoongaram masala

1 teaspoonturmeric

½ tablespoonbrown sugar

1 teaspoonground ginger

½ teaspoonsalt

3.5 clovesgarlic
minced

1can tomato paste

1can light coconut milk

Coriander
to serve

lemon
or lime, to serve
Instructions
Step 1
Spray slow cooker with non- stick spray

Step 2

Add everything except coconut milk. Can vary by adding carrots, pumpkin, potatoes.
Step 3
Cook on high for 3-4 hours or low for 6-8

Step 4
Turn off heat and stir in coconut milk
Step 5
Garnish with fresh coriander Serve with brown rice or quinoa and a squeeze of lemon or lime
