Instructions
Step 1
Heat the oven to Gas 6 or 200C.
Step 2
Heat the oil in a large pan and add the red onion and garlic. Fry on medium heat for 4-5 minutes.
Step 3
Add the paprika , stir and fry for a further minute.
Step 4
Put the sweet potatoes in the pan and add around 200ml water and leave to simmer on a low heat for 10-15 minutes until the sweet potatoes begin to feel softer.
Step 5
Add all the beans, canned tomatoes, herbs and stir then heat on medium until the mixture starts to bubble.
Step 6
Place all the contents of the pan into a casserole dish and cover with foil . Place the dish into the oven and bake for 15 minutes.
Step 7
Serve with a green salad.
