30 Minute Honey-Dijon Salmon with Fennel Salad

Instructions

Fennel Salad

Step 1
Shave fennel on a mandolin or slice thin. Then combine with all the other ingredients.

Salmon

Step 2
Make 2 thin slits into the skin of the salmon. Season with salt on both sides then wrap in paper towel to dry.

In a pan over medium-high heat, add a high smoke point oil or ghee. Sear the salmon skin-side down pressing down with a weight for at least 20 seconds.
Step 4
Once the salmon is cooked halfway, about 2-3 min, flip and continue cooking to your desired doneness.
Step 5
Turn off the heat and add butter, dijon, and cream. Then go in with capers, preserved lemon peel, preserved lemon juice, dill, parsley, and honey. Season to taste with salt. You can thin out the sauce with water if necessary.
