Mediterranean White Bean & Veggie Soup

Directions: Step 1: In a large pot or deep skillet, heat 2 tablespoons of extra virgin olive oil over medium heat. Add the onions, carrots, and celery. Sauté for 5-6 minutes until the onions are translucent and the vegetables have slightly softened. Step 2: Add the minced garlic and dried oregano to the pot. Cook for an additional minute until the garlic becomes fragrant. Step 3: Add the vegetable broth and bay leaf and bring to a simmer. Then, mix in the white beans and simmer for 15-20 minutes. Step 4: Remove from heat and add the spinach. Stir until tender. Step 5: Remove the bay leaf and season with salt and pepper. Serve warm, enjoy!
