Instructions
Step 1
I'm a large stock pot over medium low heat, saute onion in oil until softened, about 5 minutes
Step 2
Add broth, chilies, beans and chicken. Stir to combine. Bring to boil; reduce heat and simmer
Step 3
Stir in cumin, oregano, garlic and salt. Simmer 10 mins
Step 4
Divide rice evenly between bowls. Ladle soup over rice. Top with cheese, chips and sour cream. For kid friendly plate, try serving a scoop of ribs with drained beans, chicken, cheese and chips on top.
