Instructions
Step 1
Preheat the oven to 180° C (350° F) set to fan.
Step 2
Take a muffin pan and flip it over. Place half of the tortillas between the muffin cups and bake for 5-7 minutes.
Step 3
Follow the same process for the remaining ones. Let them cool.
Step 4
Place a frying pan over high heat and add 2-3 tablespoons olive oil.
Step 5
Coarsely chop the onion, finely chop the garlic, and add them to the pan. Season with salt, pepper, and sauté for 2-3 minutes.
Step 6
Add the lentils and sauté for 1-2 minutes. Add the turmeric, the cumin, the paprika, the cayenne pepper, and sauté.
Step 7
Add the canned tomatoes, the vegetable stock, the cherry tomatoes cut in half, and boil at medium-low heat for 30-35 minutes.
Step 8
Remove and let it cool.
Step 9
Add the coriander finely chopped, and mix. Divide the filling among the tortillas, add the yogurt, the coriander, and the paprika.
